Lemon Bars

Notes
- Let pan cool in the freezer until nearly frozen, then slice into bars with a warmed knife.
- Don’t use Meyer lemons – there’s not enough tang to them.
Ingredients
Crust
- 1 cup butter, softened
- 1/2 cup (100 g) white sugar
- 2 cups (240 g) all-purpose flour
Filling
- 2 1/4 cups (450 g) white sugar
- Zest of three lemons
- 1/2 cup (60 g) all-purpose flour
- 6 eggs
- 1 cup (240 mL) lemon juice
Steps
- Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of a 9” x 13” pan.
- In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into bottom of prepared pan.
- Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 2 1/4 cups sugar and the lemon zest until mixture becomes fragrant. Whisk in 1/2 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
- Bake for an additional 20 minutes in the preheated oven until the filling just barely jiggles in the center. The bars will firm up as they cool.
