Cake

Use Chocolate Cake (with Coffee, Buttermilk). Yields three 8” layers.

Cherry Filling

Use Cherry Filling recipe. Yields enough to fill a three-layer cake.

Chocolate-Espresso Buttercream (Optional)

Use the “Chocolate: Cocoa Powder” variation of American Buttercream, with 3 sticks of butter (360 g). This can be used between the layers of the cake and around the outside, to seal in the filling, but can also cause trouble if the filling is too slack.

Stabilized Whipped Cream

Use Stabilized Whipped Cream recipe scaled by 1.5x (690 mL cream). Add 2 tbsp of kirsch. This will be enough to fill the cake and decorate the outside.
