Lemon Crepe Cake
Crepes
One batch (approx. 20 crepes) of this:

Curd
One batch of this:

Then:
- Whip 1/2 cup heavy cream to stiff peaks.
- Stir about a quarter of the whipped cream into the curd, then fold in the rest.
Icing
One half-batch of this:

Assembly
- Allow everything to cool (except the icing, which should be used as soon as it’s ready).
- Place one crepe on the cake pan. Spread a layer of lemon curd on top.
- Repeat until no crepes remain. The last crepe should not be covered with curd.
- Frost the cake.
