Cake

  1. Preheat oven to 350.
  2. In a large mixing bowl mix Greek yogurt, apple sauce, olive oil, sugar and maple syrup together until combined.
  3. Mix in each egg one at a time.
  4. Mix in vanilla, flour, baking powder, baking soda, salt and apple pie spice. Once all the dry ingredients are incorporated fold in apple pieces.
  5. Pour cake batter into a well greased bundt pan. Bake for one hour or until a tooth pick is inserted in the center  and it comes out clean.
  6. Allow cake to cool for about a half hour and transfer cake to your serving plate.

Glaze

  1. Whisk powdered sugar, maple syrup and apple pie spice until smooth. Drizzle over the top of the cake and serve.
