Maple Apple Cake

Notes
- Make more glaze! Use double the ingredients.
- 1 tsp apple pie spice = 1 tsp cinnamon + 1/2 tsp nutmeg
- Combine dry ingredients before adding to wet ingredients.
Ingredients
Cake
- 1 cup low fat unsweetened Greek Yogurt
- 1/2 cup unsweetened applesauce
- 2/3 cup light olive oil
- 1 cup granulated sugar
- 1/4 cup maple syrup
- 3 large eggs
- 1 tsp vanilla extract
- 2 1/2 cups white whole wheat flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp apple pie spice
- 1 1/2 cups peeled and diced apples
Glaze
- 1/4 cup powdered sugar
- 1 tbs maple syrup
- 1/4 tsp apple pie spice
Steps
Cake
- Preheat oven to 350.
- In a large mixing bowl mix Greek yogurt, apple sauce, olive oil, sugar and maple syrup together until combined.
- Mix in each egg one at a time.
- Mix in vanilla, flour, baking powder, baking soda, salt and apple pie spice. Once all the dry ingredients are incorporated fold in apple pieces.
- Pour cake batter into a well greased bundt pan. Bake for one hour or until a tooth pick is inserted in the center and it comes out clean.
- Allow cake to cool for about a half hour and transfer cake to your serving plate.
Glaze
- Whisk powdered sugar, maple syrup and apple pie spice until smooth. Drizzle over the top of the cake and serve.
