Crumb Mixture

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease ramekins.
  2. In a medium bowl, mix the flour, sugar, cinnamon, nutmeg, and salt. Cut in butter until the mixture resembles coarse crumbs. Refrigerate while cooking the apples.

Apples

  1. Combine apples, apple cider, brown sugar, vanilla, and cinnamon in a large saucepan over medium-high heat.
  2. Cook, stirring occasionally, until apples are tender but not mushy, about 7-10 minutes.
  3. Stir in butter until melted, remove from heat and transfer apple mixture to prepared ramekins.

Assembly

  1. Scatter crumb mixture on top of apples and bake for 30 minutes, until topping is crisped and lightly browned.
