Blueberry Cobbler (Cake-Style)

  1. Preheat oven to 375 °F.
  2. In a 9-inch round baking dish, mix blueberries, 4 tbsp sugar, and orange juice. Spread evenly. Set aside.
  3. In a small bowl, mix flour, baking powder, and salt. Set aside.
  4. In a medium bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla extract. Gradually add flour mixture, mixing until just combined.
  5. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.
  6. Bake in preheated oven for 30-35 minutes, until topping is golden brown and filling is bubbling.
