Big Soft Vanilla Sugar Cookies

Ingredients
- 3 1/2 c cake flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1 c butter, room temperature
- 2 tbsp vanilla extract
- 1 1/2 c sugar
- 1/2 c vegetable oil
- 2 large eggs, room temperature
- 2 tbsp light corn syrup
Steps
- Sift together flour, salt, baking powder; set aside.
- Beat butter and vanilla until creamy. Add sugar and beat on high until light and fluffy (2-3 minutes).
- Whisk together oil, eggs, and corn syrup until well blended; mix into butter and sugar mixture until smooth, light, and fluffy.
- Reduce speed to low and gradually stir in flour mixture.
- Cover bowl with plastic wrap and refrigerate for at least 2 hours or overnight.
- Preheat oven to 325 degrees F. Line baking sheets with parchment.
- Use an ice cream scoop or two spoons to create even-sized cookies. Bake for 16-20 minutes.
Notes
- Substitute fat-free Greek yogurt (labneh) for vegetable oil.
