Use “Chocolate Cupcakes” recipe.
Chocolate-Espresso Buttercream
Use “Chocolate Buttercream Icing” recipe.
Kirsch Whipped Cream
Use “Stabilized Whipped Cream” recipe, with 2 tbsp kirsch.
Assembly
- 1 cup chocolate shavings
- 24 cherries, fresh or Maraschino (in a jar)
- Disposable piping bag fitted with a small star tip
- Disposable piping bag fitted with a large closed star tip
- Core the center of each cupcake using a knife with a serrated edge.
- Fill the hole generously with the cherry filling.
- Fill the small star tip piping bag with the chocolate-espresso buttercream. Pipe a single (flat) layer covering the top of the cupcake (and the filling).
- Fill the large closed-star tip piping bag with the whipped cream. Pipe a single swirl onto the cupcake.
- Sprinkle chocolate shavings onto the edges of the swirl.
- Pipe one large, round dollop of whipped cream on top of that first swirl.
- Garnish with a cherry.
- Keep in refrigerator until ready to serve. Cupcakes should stay fresh for 2 days.
