Enough salad for 6 people.
Ingredients
Salad
- 1 head of romaine lettuce, coarsely chopped
- 4 large tomatoes, chopped
- 3 Persian cucumbers, chopped
- 10 radishes, thinly sliced
- 4 green onions, chopped
- 1 red onion, chopped
- Handful fresh parsley, chopped
- Handful fresh dill, chopped
- 1 tbsp dried mint
- 1 tbsp sumac
- 1/2 tsp salt
Dressing
- 1/2 cup (120 mL) olive oil
- 2 tsp (10 mL) white vinegar
- 3 tbsp (60 g) pomegranate molasses
- Juice of one lemon
- 1 tbsp sumac
- 1 tbsp dried mint
- 1/2 tsp salt, adjust to taste
Pita Chips
- 3-4 pitas, split, cut into triangles or squares
- 4 tbsp (60 mL) olive oil
- Salt and pepper to taste
Steps
- Toss the pita bread in the olive oil, salt, and pepper then air fry or bake until crisp. This shouldn’t take more than 5-8 minutes at 400 ºF. Let cool.
- Whisk together dressing ingredients and set aside.
- Toss salad ingredients together.
- When ready to serve, add pita chips and dressing to salad, and toss to combine.
