Hiam’s Mloukhieh
Ingredients
- 5-6 cups mloukhieh, stems separated (“3 handfuls”)
- 2 onions, diced
- Coriander, one bunch, diced
- One head of garlic
- Juice of half a lemon
- Chicken, whole
- Coriander, dried
- Seven-spice
- Pepper
Steps
- Bring water to a boil.
- Cover mloukhieh with boiling water and let soak for one hour.
- Meanwhile, fry onions in butter until browned.
- Add half the coriander to the pan, then half the garlic.
- Wash mloukhieh under cold water, several times. Add to frying pan.
- Cover with two cups water to cover and slightly exceed level.
- Boil, squeeze in lemon juice, then lower heat and simmer for one hour.
- Add chicken broth.
- Boil chicken.
- Put reserved cousbara, garlic cloves on top of chicken.
- Add chicken to the mloukhieh.
- Add dried, ground coriander (cousbara), seven-spice, pepper.
- Simmer 15-20 minutes.
