  1. Bring water to a boil.
  2. Cover mloukhieh with boiling water and let soak for one hour.
  3. Meanwhile, fry onions in butter until browned.
  4. Add half the coriander to the pan, then half the garlic.
  5. Wash mloukhieh under cold water, several times. Add to frying pan.
  6. Cover with two cups water to cover and slightly exceed level.
  7. Boil, squeeze in lemon juice, then lower heat and simmer for one hour.
  8. Add chicken broth.
  9. Boil chicken.
  10. Put reserved cousbara, garlic cloves on top of chicken.
  11. Add chicken to the mloukhieh.
  12. Add dried, ground coriander (cousbara), seven-spice, pepper.
  13. Simmer 15-20 minutes.
