Phyllo Fruit Pot Pie
Ingredients
Filling
- 3 lbs seasonal fruit, cut into 1” cubes
- 1/2 c sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Juice of one lemon
- 1/4 c cornstarch
Topping
- 1 package phyllo dough
- 1/2 c olive oil
- 1/2 c sugar
- 2 tsp cinnamon
Steps
- Preheat oven to 350 F.
- Combine filling ingredients; place into 9” x 13” baking dish.
- Combine sugar, cinnamon for topping.
- Peel sheet of phyllo, lay flat on work surface. Brush top with oil, sprinkle with cinnamon sugar.
- Lightly scrunch up the phyllo sheet and place it on top of the fruit.
- Repeat #4 and #5 until the whole dish is covered.
- Bake for 40-50 minutes until fruit is bubbly and phyllo is golden brown and crispy.
