Quick-Pickled Onions

One pickled onion.
Ingredients
- 1/2 cups (120 mL) apple cider vinegar
- 1 cup (240 mL) water
- 1 tablespoon (13 g) sugar
- 1 1/2 teaspoons kosher salt
- 1 red onion, thinly sliced
Steps
- Whisk first 4 ingredients in a small bowl until sugar and salt dissolve.
- Place onion in a jar; pour vinegar mixture over. Let sit at room temperature for 1 hour.
- Cover and chill. Drain onions before using.
